Banana Cake

Hi, Happy Eid. Salam Aidil Fitri.

The festive mood is still around although the hari raya celebration has already ended. My family and me were just coming back from kampung after spending a week holiday in my beloved hometown, inconjunction with the hari raya festival. The day when we drove back to hometown in Kelantan, we were very fortunated because not much traffic on the road. The journey that we usually spend around 5 to 6 hours, has been cut short to approximately less than four hours. I don't know how it happened, since I slept all the way, only once in a while I opened my eyes, and without I realised it, my eye lids closed again. Since that day was a fasting day in ramadhan month, so my husband was driving non-stop starting from my house in Jitra through out the way to my hometown in a small village in Pulai Chondong. Usually, we have to stop for a coffee break and even my children will have the opportunities to practise their swimming and diving skills in one of the river somewhere in Perak. But, since that day was a fasting day in ramadhan, obviously we didn't need to make any stop until we reached our destination.
All the way, we witnessed several road accidents. Somewhere in Grik, a car was upside down, and not long after that several cars bumped to each others, and the others, I didn't remember coz obviously I was sleeping when that occured. Alhamdulillah, we were safely arrived.

Now, I was back in Jitra again, after splendidly, spending our precious holiday moment. And today is my working day again. The normal routine goes on again.

Yesterday, I did bake a banana cake to bring to the office.This is the first time I baked a banana caked, yes I admit, I have eaten some banana cakes several times, and watching my sister preparing and baking the cake, but yet never did it with my own hand.

The recipe is so simple( I got this recipe from my sister), what I need is
1. Banana - the most important ingredients, a must have, if this is omitted, then we couldn't afford to have a banana cake. My sister said it is better if i used the kapas type, but what i have only the berangan type. Since i got the berangan type, and since my husband loves to eat banana cakes very much, then i made an effort to prepare this.
2. 2 cups of flours
3. 1 cup of sugar
4. 1 cup of condensed milk. I think we can also use fresh milk coz it is less sweet.
5. 1 cup or corn oil
6. a table spoon of soda bicarbonate( only a table spoon, and not a spoon that sized a table)
7. a table spoon of ovellete. (When i prepare the cake, i don't have the ovellete, so i just replaced it with vegetable spread)
8. Don't forget 3 eggs. Make sure only the eggs not the chicken.
9. A little bit of salt. Since i'm not using butter or margerine so i need salt
10. Several drops of vanilla essence. Luckily i got the several last drops in the freeze.

Mix all the ingredients well. Then baked at 180 - 200 degrees arround 30 to 40 minutes. Depends, you have to always poke the cake with fork to make sure it's already baked. (that what i did)

Finally, i have made my very own first banana cake. It taste very good, moist but quite sweet. May be next time i will reduce the amount of the sugar from one cup to three quarter cup. Or may be, the cup that i used should be smaller in size. I guess.

The ingredients amount as mentioned able to produce 2 medium size banana caked. I slices some and packed for my son to bring to his school.

I brought the banana cake to the office, and it's not bad at all. From a full tupperware, it's almost finished.
